Going to do a 4.5 lb belly and a rack of spares tomorrow. I am guessing they will take around the same time to be done. I have a vertical smoker and I planned on having the belly on a rack higher than the ribs so the fat could drip on to the ribs. Does that sound like a good idea or am I missing something obvious?
