Pops Breakfast Sausage! I promise I will not call anyone names when they use an Electric Meat Grind

When relatives were living adjacent, I had a share in the LEM and some smokers and other equipment.
When they moved away not long ago. I traded my share in all that for some other stuff that I needed more than the equipment, so I'm back to using the manual grinders and my little smokehouse and old charcoal smoker.

Hopefully this summer I can get another LEM.

I looked at that one but settled for the LEM #8 575 watt for the same price and free shipping from Amazon. It will crank out about 3 pounds a minute and is easy to clean.

I just bought 11 pounds of pork chops with bones and made 10 pound of Texas hot links -  It was a lot faster than the Kitchen Aid.

I am trying to research things.  Don't know if I would get more miles out of a food processor or a meat grinder.  Hmmmmm.....

Yesterday I ground 15 pounds of pork for todays sausage making..

I have the small commercial Cabelas grinder...1/2 hp..

Turned it on... started grinding   ...  finished 3 minutes later..

Just a friendly heads-up, a food processor won't work well to grind meat, it shreds it rather than grind it.
Fat smear is also a big problem with a food processor.

Thanks Martin...was just thinking of which one I would use the most in the kitchen. Figured it would make things too mushy.
 
My parents' Universal #2 sits behind me as I type.  Still in its green box.

It fed us for a generation, although it didn't get used all that much.  I especially remember that ham salad sandwiches my Mom would make for family gatherings.

I have chosen to go the electric route for obvious reasons.

Still, those old Universals keep us grounded as to where we came from!

I actually have 2 of them.  The one I used is 60+ years old and is my Grand Mother's.  There is another green box hidden in the "black hole" around here in this house with several plates.  For the life of me, cant lay my hands on it right now. Ham Salad is sooo good.  Made several batches for here and to take to sick friends or for comfort to those who needed it too. I some times miss the simpler days.
I vote for the grinder!

From the kitchen of Kevin Taylor, the BBQ Guru

1 5 pound pork butt
1 bottle beer
1 cup Soy Protein Concentrate
2 tablespoons black pepper, coarsely ground
2 tablespoons red pepper, crushed
2 tablespoons cayenne pepper
2 tablespoons paprika
3 tablespoons kosher (coarse) salt
2 tablespoons mustard seed
1/4 cup garlic, minced
1 tablespoon garlic powder
1 tablespoon MSG (optional)
1 teaspoon Insta Cure #1
1 teaspoon bay leaves , ground
1 teaspoon coriander
1 teaspoon thyme, dried

Mix all spices with beer.
Grind pork for sausage.
Mix beer/spices thoroughly into the meat.
Form into sausage links and grill or smoke.


I added the Soy Protein and used chipotle instead of Cayenne pepper.

I thought I had pictures ofter smoking but can't find any.

Here is what I ended up with after the grind!  Didnt get a chance to upload the s-view yesterday.


I did a boat load of 3 ounce patties


I got 5 one pound rolls...or loafs or taters what ever you want to call them.


This was the huge tupper ware container full of yummy sausage!
 
I did it because all of you make me want SAUSAGE....everytime yall post s-views!  It's your fault!

This post made me cringe and giggle at the same time. Bless those people that post that all they use is a manual grinder and it does a great job. I had to use one once and was willing to do unmentionable things to Never have to do it again. That's just me, I might be a whimp.

Oh Yes...I do and I really do!  Love what I made and will do it again!  I feel good about knowing what is in there...and it's "fresh"...and I feel accomplished that the stewpid manual grinder did NOT Beat me!  LOL (yes...my arm is still sore.....

It tasted great!  Going to to cook some up on Sunday Morning with my homemade biscuits.  Yum yum!
