My first go at it. Two oranges cut and squeezed, whole black peppercorn, some oregano and sage, and the Weber brand kicking chicken seasoning, and a small container of coarse kosher salt roughly 2.5 cups worth maybe 3. Going to spatchcock them then throw on the smoker early Thursday morning. I’ve got a container of light mayo, and I am going to use that as a binder and I will make up a seasoning with all of the same stuff minus the black peppercorns and rub that on there and see how it comes out.

I'm pretty lazy on the cleaning side. I line a 5 gallon flat back watering bucket with unscented trash bags for my brine process. Twist and tie and place in the bottom of a fridge, bucket and all. How long do you brine and do you leave the cooler out in the open?
 
Brining like this is a terrible idea unless you are going to refrigerate the entire cooler
Yes, but I still don't know what's in the brine, guessing from the write up it's chickens... either way, my first thought was a cooler full of jungle juice.

I thought about using a bucket but I’m doing two birds, thought the cooler in the fridge would just work better.

Unscented trash bags still may contain some powder to help them open easily. There are not food safe. I have used trash bags in the past, but buy the correct food safe bags now.
