It sure where to put this post ! Been making this soup for about forty years fairly cheap to make and taste like it was cooked for hours ! Don’t laugh about the canned veggies till you try it ! Anyway has been really cold here in central pa so was a good day for soup and homemade bread ! Always serve this slip with grated Parmesan and homemade bread and real butter !

Not being critical here but the soup is called "poor mans vegetable soup" and its posted in the beef forum and other than canned veggies no one reading knows what's in the soup. What kind of bread?Inquiring minds want to know!

I've been known to crumble some ground beef into a pot of boiling water with some chopped onions, and let it go at a low boil for a couple hours, to make the stock. After that, skim the fat off the top, add diced potatoes, canned diced tomatoes, and whatever other canned vegetables I want to dump in. It makes for a pretty hearty, and fairly cheap vegetable soup. I also add tomato juice to my stock, or sometimes spicy v8.
