I have a new smoker and am trying to learn the ins and outs. I tempered it yesterday s pr the instructions for its maiden voyage today - the issue I am having is getting it up to the poking temperature. It has been running for over 4 hours now and the highest the temperature on the gauge has red is 181 degrees - in trying to ook ins at 225, my oncern is they may never be oooked! Any suggestions?
 
Joe, morning and welcome to the forum....   I recommend a remote therm to check the temps inside your smoker...  Factory gauges are notoriously bad for being calibrated....   Maverick therm is one... there are many brands out there....  Set the probe on the shelf where you cook the meat for the most accurate reading....   Put the probe in boiling water, first, to make sure it reads close to 212 degrees...     Dave
