I have a new smoker and am trying to learn the ins and outs.  I tempered it yesterday s pr the instructions for its maiden voyage today - the issue I am having is getting it up to the poking temperature.  It has been running for over 4 hours now and the highest the temperature on the gauge has red is 181 degrees - in trying to ook ins at 225, my oncern is they may never be oooked!
