Made up a pizza using store bought dough. A client who operates a local cheese shop had given us a truffle salami. Had to refrain from snacking on it. We put tomato sauce, salami, fresh veggies (mushroom, onion, sweet pepper) and topped with lots of cheese and fried bacon. I had started offset before assembling the pizza so it was ready to go. Put on indirect (I use a Hot/Cold/Hot set up where food is above cold). Put a wood chip box on with hickory wood chips, closed lid and let it run for 3/4 hour. For last 1/2, checked if crust done a few times as offset was up around 400F. Water pan below cold section.

Good crust, all cheese melted, flavours all blended together. Tasty! Sorry, the leftover has been claimed by my 23 y.o. daughter. Her favourite food!
