Pitboss sporstman820 heat drops so much befor starting up

Any idea y my sportsman drops to like 195 when set at 250 befor starting up again

Don't have a pellet pooper but might try cleaning the internal temp probe (gently) with steel wool or something similar.
Others will offer more ideas.

They make more smoke at low temps and I know my PitBoss can swing 30-40 either way if I mess with the setting button that makes larger swings, if you look you might see it shoot past, it is supposed to equal out at set temps, a oven will run 20-35 either side of set temp. I wouldn't worry to much about the swing unless it flames out or starts burning stuff lol.
