Older Pit Boss PB700FBW2 "Classic"
A very casual user, set temp and forget. Buddy was saying he got rid of his pellet smoker because of lack of smoke flavor. I've always liked a mild smoke so never looked any deeper than set at 225 and waiting for probe to say 205.
Was reading something AI generated about P settings. It suggested leaving it in SMOKE and turning the P setting down from the preset level 4 to keep the temp at about 225 for your desired length of heavier smoke before turning it up to the temperature you desire to finish the cook at. Using my old wood smoker for sausage I smoke for about 3 hours then stop chips to finish. I'd appreciate someone using a Pit Boss in this manner (hold about 225) for a few hours then turn up the temp to finish. Never would have thought about this. What P setting gets me to about 225? Would have to get a fire box thermometer too. I'd prefer the machine settings alone as opposed to adding a smoke tube if I wanted a heavier smoke.
