I've just tried to do the initial "Burn Off" for my BRAND NEW Pit Boss blue blazing 3 series vertical Electric Smoker. Manual stated a temp of 350° for about 30-40 minutes. After 2 hrs the temperature gauge was still only reading 250°. I have been in touch with Pit Boss customer service and am awaiting their response. I can't seem to find where online I can go If I need to replace this models temperature gauge. Any suggestions, thanks.
 
I use separate thermos as well but it sure should be closer than that. Is it windy and / or cold where you are?
It was 15°c so I don't think that should be an issue. Like I mentioned the smoker is brand new never used I would just like to start off with everything working. Will CALL customer service tomorrow as warranty is not an issue. Indeed duo thermos is the way to go. I ordered an internal and external meat prob. Can't wait to get smokin'.
 
I suppose that's one idea.

I have a Pit Boss Copperhead 5 which is a larger version of what you have. The digital gauge isn't going to show you a steady overall temp like putting an oven thermometer inside your smoker.

I know you said it's brand new, but make sure the temp probe inside is clean. Make sure you are using a filled water pan and it's not in a ton of wind or cold weather.

If you've done all of these things and it's still not operating properly, call Pit Boss Customer Service and report that. It's possible you could have a faulty temp probe

Good idea to check if prob is clean but I thought that's what the initial burn off is for. Still, will clean it any way. thanks. Also calling PB CS tomorrow.
