Like DirtSailor said.....'it's been a chicken week'. I decided to inject last night...something I rarely do. Saw the Coconut Pineapple Jumex nectar and thought....hmmmmmm, might be fun & different. Gave the legs and thighs a healthy shot of juice inside and then a heavy dose of rub on the outside and let it rest for the day. Used the indirect coals method again to final charred goodness. Some sticky rice as the starch and a bunch of asparagus for the veg.....all was good. Chicken was moist and juicy, nice flavor from the injection.

LOL.....thanks all. And yes, that's about right on the portion but wrong on my scale.....sighhhhh
 
Looks great WIllie. I wonder how that would be with a peanut butter rub. Kind of a play on Thai style chicken
