Pimento Cheese Spread

The other thread got me really craving some. I don't buy the store bought anymore as it's loaded usually with unnecessary fructose etc. I started with an online recipe and adjusted quite a bit. 6 cups shredded sharp cheddar, 16 oz of very soft cream cheese, 1/2 cup mayo, 3 4 oz jars of diced pimentos , 1t each of garlic and onion powder and garlic salt. 1/2 t black pepper and between 1 1/2t and 1T of Splenda (or sugar) to taste. The Splenda made a ton of difference in achieving the flavor I wanted. Recipe started with 4 cups cheddar, I eyeballed what I think was about 2 more. Could have been 3. Stuff is tasty for sure. Packed some up in decorative mason jars for gifts and the rest will go out for our gathering Christmas day. It is very thick. I may work on adjusting it to a thinner texture next time. NOTE: I missed the mayo when I posted this and have updated above. Figured that out when I went to make more today. Also note cheddar may be closer to 7 cups. I start with 5 and then add as I mix until the ratio looks right to me. Today was around 7 cups.

Book Marked. I'm going to give this a try. I've made it before, but not with cream chesse.

Thanks guys! Just dropped a gift bag off to my buddy and his wife. Hot sauces, summer sausage and this pimento spread. They loved the sausage and cheese. Funny story my buddy apparently just told his mother in law yesterday he hadn't had the pimento cheese in years and missed it. Crazy that I coincidentally made it for the gift bag. Neighbors love them both too.

Looks great. That's on my radar for this holiday vacation. Thanks for the recipe. Mine will have some chopped jalapenos added.

How much Splenda did you use?

Looks and sounds wonderful. I have tried to stuff jalapeno's a couple times with pimento cheese but a lot of it runs out. The thicker may work for this. I got the idea yesterday to make pimento cheese devil eggs. I going to try them today.

If you try this recipe you will never be satisfied with store-bought pimiento cheese. Note: I did not use any sweetener and added 1/2 of a chopped jalapeno.
Glad you liked it. I'd have added a little jalapeno to mine as well but had spice averse folks to share with

Definitely a Duke's mayo household here! I dont hesitate to use "sawdust" shredded Walmart shredded cheese and mine comes out great, but I bet fresh grated would be even better.
 
Recipe updated, missed the mayo when I posted it. Also note the 6 cups of cheese is a guideline. I start there and add more as needed. I just assess it visually until it looks right.
 
Just mixed up a small batch based on 8oz of ( oops . that's cream cheese ) and used 8oz. Cabot sharp aged cheddar .
Used Dukes and added some jalapenos . I only added 1/2 tsp of white sugar . Needs more in my opinion , but I got the 2 thumbs up and " hand me another cracker " from my daughter , so I left it as is . It's good . Needs to be sweeter , but we'll see after it sit a bit .
