My very first smoked chicken:

This is the first time ive ever picked out a brisket. Is it a good one? I got its for $20.00! ;D

well the chicken looks great all nice an golden colored. Now your brisket looks good from here but I not there with my fingers. Now you will hear alot of folks here tell you to trim it the fat that is down to a 1/2" inch but I think that fat is flavor and I don't trim mine hardly at all. maybe the big hard fat cap that they all have I'll cut just the hard part of and leave most of it still on there. Then put it in the smoker fat side up and let the fat melt and keep your brisket all juicy and let the goodness smoke in. Don't forget the Qview of your smoke either.
 
Looking real good, how did the chicken taste? The WSM is one easy cooker to get used to isn't it.

I do see so TBS happening, that's exactly what you want to look for, great job.

Now get to that brisket

it taste ok i think i will cut down on the wood next time i put 4 wood chuncks maybe only 2 next time. It was alittle undercooked i think the probe was touching bone i had in thigh i don't trust the breast not that i don't enjoy a breast or two.
