Pickling Day: Eggs/Hotdogs & Sausage

Doing 3 jars today

First is Amish pickled mustard eggs.
Easy recipe. This will do 24 eggs.
4 cups water
2 cups vinegar
3 T mustard
1t mustard seed
2t tumerick

Add all to the pan and boil for 5 mins. Let cool then pour over eggs.

Next is hot pickled hot dogs.
I only did 1 jar.
1.5 cups water
1 cup vinegar
your choice of hot sauce
I went with Starnes sauce (its pretty warm)

Any brand of hot dogs you like.

Brink all the liquids to a broil and let cool.

Now pickled garlic smoked sausage.
Same recipe as the bologna except i added pickled garlic to the bottom of the jar.

All done.
On the hotdog if you keep the jar inverted in the fridge the ones closest to the lid will pickle faster, as you eat the dogs you can right the jar

Yes please, I’ll have a little of each!! Lol. I haven’t made Amish mustard eggs in too long. I’d love those hot dogs and sausages too for sure.

Looks great! I have a jar of mustard eggs getting ready, they've been in there a week already.

Cool idea with inverting the hotdogs so you eat the ones that pickle faster. Thanks for the tip.
 
I had to try the pickled hot dogs

What i would do different next time is add more hot sauce and a tad more salt.
(and another week in fridge)
Other than that they are good, would be good with some thin sliced smoked cheese and crackers.
