Pellet Hopper and Temperature Control on Fridge Build Help Needed

Hello all,

I'm currently in the middle of my own fridge build and this site has been an awesome source for information.  I have been lurking for a months researching many different fridge builds.  

I'm building a small Kelvinator fridge.  I have completely gutted and removed all tar and replaced all the existing insulation with Roxul.  I am on the search for the heating portion of my build and would like to order my parts, whether it be a pellet hopper or a heating element.

My plan was to use a Smoke Daddy pellet pro hopper assembly or something similar but after some research I am worried about not being able to maintain temperatures in the 150-160 degree range.  It seems that a lot of these type of smokers struggle to get to those low temperatures and require fans and extra venting etc.

Most of my smoking consists of sausage, pepperoni and jerky, however I would like the option of trying other things at higher temps.

Any advice on this area would be greatly appreciated.
