Cadillac, I have a gravity fed in the making. I had thought about another fridge build but its honestly easier to start from scratch! It was worth it in the end but a lot of work retro fitting everything to work.

Truth is this was the 2nd brisket I had fixed in my whole life. It turned out good but was a different flavor than what I would have wanted. Competition cooking is definitely different than what I wanna eat.

What type of insulation did you use and what was the thickness?

I used high temp mineral wool, 3 inches thick.
