PBBE and Cornell Chicken thighs

I scored a little over 10 lbs of Berkshire pork belly last week at Kroger for $4.79 / lbs and haven’t had PBBE in too long. Walmart had boneless skinless thighs for $1.99 so I grabbed two big family packs. Last week pops6927 pops6927 posted the Cornell recipe which reminded me of how much I love that. So what we have today is PBBE with my sweet heat Keto rub smoked low and slow to 195F with B&B Oak lump and a lot of cherrywood. In a pan after to swim in G Hughes BBQ, Swerve Brown and real butter. Cooked until they were glazed nicely. ABT’s are stuffed with a mix of hot Italian sausage, sharp cheddar and a little cream cheese to help it stick. Cornell chicken (Fireman’s variation check Pops post)marinade for 2 days and grilled on a 450F hot Kamado. The smell of the marinade hitting the coal was intoxicating. Last up a Steakhouse style faked potato salad. Roasted soft cauliflower for the potato sub. Has bacon , cheddar, red onion and a sauce of sour cream, mayo, lemon juice and garlic. No step by step today but here are some pics from the day. If anyone would like I can post the salad recipe later it’s really good

Ok, so let me get this straight ...

Cornell chicken (and Cornell is in Tompkins Co ... almost went there, but that’s another story)

Recipe by a Dr Baker at the extension in Fulton/Montgomery Counties ... and Canojaharie where we used to jump off the waterfalls, and that’s another story too)

Isn't Keto supposed to cut the carbs and moderate the calories?
That is a lot of amazing food.
Yep you got it , low net carbs and calories within a normal range for your weight or a deficit if you want to lose weight. That plate was forcmy tiny wife who ate about half of it lol
 
Wow Jeff!! Another amazing looking meal my friend. That must have been a ton of work but seemingly well worth the effort. Great job and congrats on a much deserved and long overdue ride on the carousel!!
