Pastrami from corned beef - pic added

Hi all, I made pastrami from kroger corned beef. soaked 24 hours in water with 3-4 water changes. then made a rub by merging a few I copied off SMF to make my own blend. smoked about 8 hours at 235 to about 165/170 IT (there were 2) then foiled to 200. turned out great! nice salt level. 12 hour soak of first attempt was still too salty for me.
 
Congrats. The last two times I bought packer briskets I've made pastrami and corned beef. For the pastrami I followed the recipe over on amazingribs.com. It's simple and SO good. Glad to hear this one turned out for you.
 
Glad they turned out well. When I first started doing this it was hit or miss with the salt content. Now it's overnight with at least three water changes.

oh yes - picture...these were kinda oddly cut right out of the bag. i think they were part point and part flat with the fat layer cut out...they looked like the normal rectangular flats when in the bag (that is half painted). turned out good anyways.View attachment 392154
