Well I am bored sitting at home. The wife is working and the weather stinks around here so I am not fishing or smoking today. I was hungry so I dug around in the fridge and found some left over pastrami from last weekend's smoke. I didn't have anything to make a reuben so I figured I would try to make a egg/pastrami sandwich of some sort. Well it was awesome I know what I am having for breakfast the next couple of days.

Fried two eggs then put pastrami and cheese on the top.


Slid all of that goodness between two pieces of bread and fried it up and scarfed it down in no time. I almost forgot to take a finish pic since I was eating so fast.


It reminded me of a Denver omlet sandwich that I use to love as a kid. Good stuff. Since I'm not smoking today I had to get some type of smoke fix. I better find something to smoke for tomorrow even though its suppose to be windy and rainy again tomorrow. The smoke shack might have to get fired up since that baby will go no matter how much wind or rain mother nature throws at it. Thanks for looking at my lame post.

No its just a cheese slice. I need to smoke some velveeta cheese bricks again soon. If you haven't tried it I highly suggest it. I cut the brick into thirds or so then smoke them for a few hours. I really firms up the cheese and tastes awesome. I usually buy the cheese in the Blue box that seems to hold up better to the higher temps. But then again that was before I knew what I know now. I just use a soldering iron and tin can then I don't have to worry about the heat in the smoker.
 
That's a great looking breakfast, I love making new things with the left overs. I had french toast with the sourdough I made last week
 
I smoked a whole bunch of different cheeses two weeks ago, but I never thought about Velveeta----One of my favorites.
I had a small smoked cheese tasting party on Thursday. I'll be posting the results soon---maybe tomorrow
