Hey i was looking to see if it is possible to do a few hours of smoke on a brisket pull it off and then slice and cube it and throw it into a chili.

I know most people say just cook it all the way through but im not going to hit and food danger zones due to pulling it off and throwing it into a pot with everything that's already up to temp.

Has anyone tried this or would recommend it? I figured i could do this in the early hours of the morning to get a bit of a break before people start coming over. Propane burner pot is a lot less tedious then checking on a wood fire
 
Well the only thing I might do different if I was going this route would be to cube it first then smoke and then hot out of the smoker throw it into chili pot. Think it would save time in long run.

I have no idea why that didn't come to mind. Thats honestly not a bad idea. Ill be doing a trial run here in a week or two just for the immediate family. I'll keep ya posted on how it turns out.
 
Brisket chili ain't a cheap chili. still sounds tasty. you doing the Texas Chili, meat and spice only? or adding the veggies and beans?

Only veggies will be some caramelized onions and absolutely no beans haha.

And it is not cheap but I'd figure i would just start with a two pre cut flat pieces before i drop some serious cash on two briskets for my winter get together (30 plus people not including is people bring their friends we typically end up closer to 40-50). Because if the chili doesn't work out the way i want it with the trial runs. I can always just do regular brisket and some pulled pork.
