Yep! That would be my pick. Looks great. I do a fancy Stroganoff with chunks of Tenderloin trimmed to cut steaks, Tender Tips. Sear the Beef rare, finish making the sauce, then add the Beef to heat and finish to med/rare. Your dish would be spectacular with Tender Tips!...JJ
 
The mere mention of modifying/adjusting the dish had the family looking for torches and pitchforks.
