Ok, being from cattle country here I should know better, but....What in the world do you do with Ox Tail? A local shop has them on sale and me being the know it all around here I didn't want to ask the butcher why I should buy them when he shoved me a whole tray full. I just said I didn't have the time to mess with them right now.

So what do you do, use them in stew or what? Somebody here has to know. Just looking at them the only thing that popped in my mind was turtle soup.

smoke them then braise them in wine stock and carrots, celery and onions. until they are falling off the bone.

good luck

Ah just great, now I gotta go back and try these. Maybe I might sub in some JD instead of the wine to spice it up.......Richtee what do you think?

Hey DMcG, you better get some extra JD for when the Cats kick your little Chix'n butts. Lol.

We'll see about that Scott. But them Cats are on a roll aren't they? Hey whats up out in them parts? My son had a not so fun run in with a big old buck yesterday. Came in and crashed his shop.

As kids they were cheap not like now. Always had excellent soup.

Now the price is outrageous. Great soup

Oxtails are a popular food in the Caribbean islands; this link is to a website with a Jamaican recipe complete with pictures etc.

My family loves Oxtail so we cook them often, I havenâ€[emoji]8482[/emoji]t tried the actual recipe but the ingredients & technique seem ok…however, I strongly recommend skimming off the fat before serving.

I once smoked a whole Oxtail…it had good flavor, but was dry & trashy…I added most of it to a pot of Oxtails.

Try oxtails they are delicious.
