overnight butt on WSM 18.5

Haven't done too many overnight on my 18.5 due to trust issues. almost full ring of B&B. it settled in at 237-250 for the first 9,5hrs. Apple and hickory chunks Set alarm on Inkbirdbbq IBBQ-4T in case of heat issues (took nap). When money muscle probe hit 195, stirred coals and opened vents .Temp went up to 290 let go until 204. total cook 11.5 hours. in cooler for 3 hours. Lots left for suck bag freezer storage
