Ok so I went super easy this time, I just seasoned up with my rib rub nothing extra and put em in the fridge overnight, today I pulled it and fired up the UDS. 8 hours later I cubed and sauced and spinkled more rub onto them then back on the smoker for 2 more hours.. Or 1 hour and 45 min as thats as long as I could take it, they smelled so good.

I only did one two pound roast as it was me and the wife. We both ate good.

We like chuckie burnt ends here and yours look wonderful.
