                          “Just Can’t Win”

In our yard wife got a Spirit House. Place where her ancestors can stop by for a visit. She will put food and drink out for them. When the birds and two little mongooses eat the food she says it’s some family member. Went out this morning and there was a pig head setting there. It was special gift to her grandparents for bringing her good luck. So the next time you have family over and you bitch about having to feed them, just think of me. I haft to take care of them even after they are dead. Just can’t win. At least she didn't ask me to smoke it for her.

beautiful altar.  Not to sure about the pigs head,  I'm guessing after a couple of days someone will be looking for another place to put it!
 
The head didn't stay long--Lek gave it to Burmese worker here in complex--I let her do her thing when it comes to Buddha--Did haft to get on her when we first got together about using my good drinking whiskey--So they get the cheap stuff now--Like Dave said whatever makes her happy

Roasted/Smoked/Braised Pig Head is some good eats...My Wife however, would send me to my Ancestors if I ever brought one home...JJ
 
I've had hog head before, cured and smoked.  You have to inject the jowls into the sinuses and in the brain stem into the brain to pickle it properly. 
 
How about boiling the hogs head,, get it tender enough to where meat can be pulled from it.  Pull the meat and grind up to a mince then put back into the pot with the broth,, add some spices to give it extra flavor,, bring to boil,, then let simmer.  Slowly start to add some white corn meal too it, make sure it is just on a slow boil.  Keep adding till you get a thick porridge, this stage takes a lot of stirring (your hand and arm will get tired, trust me),  Take off the heat and put into little foil pans to refrigerate.  Voila,, you have hogs head cheese :)  Little dip in egg mix and toss in fry pan,, yummy stuff :)
