I trim mine but still cook everything but the membrane. The flap meat goes in the beans or sometimes vanishes (burp).
 
Give up on em..... no way. You can't do that. You have to keep workin on it until you get it right. I bet they turn out so good this time you'll be watchin for them to go on sale again so you can try and out do yourself.
 
ok every one I think I just might have to give then 1 more try. I cooked 2 racks but cut them in half so I had 4 half racks ( man I need some rib racks). I did the 3-2-1 to the tee, 2 of the 4 were great the other 2 were tough and fatty. I think the thicker racks will need more time in the smoker. any way here are the pics.

Glad at least 2 of the 4 came out great.
 
Sounds like ya need to find a place that sells a better cut of meat. Ya can't beat having a good meat market for your supply.
