Is the name typed... yes TYPED at the top of this sheet I got from a buddy who was cleaning out his Dad's stuff after he passed away last year. A fresh venison breakfast apparently.
Thought it looked good enough to pass on to folks who'd appreciate it, as he did for me :{)

Simple "Old Time" appearing mix for sure. Sometimes more is just more...and is not neccessary. Altho I'd toss in a Tbsp or so of rosemary and maybe some savory.

13 Lbs Venison well trimmed and ground
3 Lbs Pork ground
2 Lbs bacon ground
2 to 4 Tbsp salt- to taste
2 Tbsp CBP
1-2 tbsp sage
1 Tbsp thyme
Crushed red pepper to taste 1 Tbsp mild mix 2 for hot

Mix and freeze in rolls
 
Thanks Rich, I am in the process of planning my first breakfast sausage, so many recipes out there. This will be good to add to my book.

Interesting, ground bacon. I never would have thought to do that. Next time around I'll give this one a try. Thanx for passing it along.
