Hello from McKinney Texas! This is Nick Checking into the SMF. I lived on a sail boat in the Caribbean for a few years and had to trade in my Tejas BBQ smoker pit on a small propane grill hanging off the stern rail. I have cooked and hung out with a few BBQ teams over the years. We one brisket at the San Antonio Rodeo cook off two years in a row and placed in the top 15 in ribs out of 175+ teams. I don't have the space or time to run another big smoker for a while so just purchased the 2nd Gen MES 40". Burned it in tonight and ordered a AMNPS to kick into auto and pile on the smoke. Have already been benefiting from the great information here on the SMF and looking forward to learning some new tricks. SmokeOne comes from the Southern rock band Blackberry Smoke. If you like Southern Rock check em out.
