Been smoking with my 18.5 wsm. All is great. Today I do the same minion method, half a big bag of Blue king, three two fist sized hunks of Apple, and a chimney started with about 15 briquettes to white hot (lazy minion method.

I've got temps at 225 for ribs, been holding steady 20 minutes. The smoke is getting more off white, went from white and billowy to really thick.

Vents are all at half, top vent wide the heck open. Draft is good, the color on the coals is average red orange.

Sounds like you have some wet wood or charcoal. Also how much bark were on the wood chunks?
Bark was minimal, one hunk (half fist) had a little bit (less than half of the back of the hunk)

At about 2 hours its taming down, I think there is a moisture issue in my coals. I think ill let everything sit till about 1130, and see if it dies down.
