I am new to smoking only done it maybe a handful of times. but I work at a brewery and have access to lots of kegs. so im gunna try to build one. im not sure how the offset works. does all the cooking heat come from the fire box? Do you use propane to make the chips smoke or do u use full sized pieces of wood and just let it burn like a fire. Any info will be helpful thanks

I'm going to try and make a smoker out of two kegs. Just need a coupe questions what's better for the fire box using a propane burner or charcoal? Also do you use water in offset smokers. so the heat from the fire box is what cooks the meat is there any other source of heat in the smoke chamber? Thanks any info will help  

What is the design you are planning on building ??  That will determine the best heat/smoke situation...

Can you provide a drawing or something for us to help you please....

i am a terrible drawer so im not gonna do that. im thinking about taking a keg laying it horizontal then attaching a mini keg on the side of it so use as a fire box. not sure if i should use propane or coal for the heat.
