afte reading a reply by gypsyseagod talkin about cracklins brought back memories. i am looking for a good homemade southern style recipe for cracklin cornbread. if anyone could help and type it down or sent me in the right direction of a site it would be greatly appreciated. thanks

Here's the one I use....

1 1/4 cups flour
3/4 cup cornmeal
1/4 cup of sugar
2 tsp baking powder
1/2 tsp salt
1 cup milk
1/4 cup of oil
1 egg

optional, you can add ..1/2 cup or more of cracklins
1/4 cup chopped onion
1/2 cup corn and
2 or 3 chopped jalapenos
Or leave them out.

Heat oven to 400 degrees.

Mix the dry ingredients first.
Put oil in a 10" cast iron skillet, heat in oven for a few minutes.
Pour the heated oil into the dry ingredients, add milk and egg.
Mix well
Add any of the optional items.

Pour in skillet and bake for 20 to 25 minutes until golden.

Yummmmmmmmmm I love cornbread! BBQPitStop has a realy great cornbread recipe I meant to ask her about. They had people begging to buy the crumbs! It's real light and fluffy and I think they put hoeny butter on it if I remember right. Bet thatd be great with cracklins!
