As I have been traveling lately, I have been tasting something "funky" in the Que at various restaurants.  For some reason when I have been eating Que smoked with Hickory, I can taste something that I can only describe as a wet sand taste.  It tastes as someone has taken a bucket of beach and ocean then dumped it onto the meat during the smoke.  I can taste it on all meat but it is more pronounced in chicken.

I have tried multiple places and multiple sauces but can always taste it.

Is this just the way hickory is, or is it caused by an issue during the smoke process?

Thanks for the help

Not trying to be a smart-alec here, but maybe it's your taste buds. I've heard that some medications can alter how things taste. You mentioned it happened in various restaurants. Maybe your "taster is stuck"!!!!!

Just an idea.

I have found that since smoking my own stuff...the flavors are not as good as others now.  Sometimes I have found out that they are using Liquid Smoke.  Hate that stuff....but that is me.

I think you are just getting your palate used to better BBQ!

You say you are noticing this everywhere that uses hickory for smoking?  Could be a taste bud thing - is this recent?

Like Kat said, could be liquid smoke causing the issue - I know a lot of places put it in their sauce.

Try smoking your own with hickory...you probably do a better job anyway!
