The temperature is zero F and it's time to get some wild cold. I had most of a big head of cauliflower to move so I cut it up and blanched it in batches = lots of nice steam for the kitchen. I set them out on wax paper on a cookie sheet, and set them to freeze in the smoker.
When they're "individually frozen" like this I can bag them and keep them in the freezer. Then when I use them I can measure out how much I want, and they'll already be half-cooked.
