No Foil BB Ribs and Spares

I decided i would try doing the no foil method and i do believe i have joined the dark side... i used Jeff's rub and let em smoke around 250 for 5.5 hours.... these were the best ribs i have done yet... Thanks for lookin. 


  


I had been looking for a rib rack to fit in my 14.5 WSM with no luck at 3 of my surrounding Lowe's and i cant even remember how many wally worlds i have been to... but i decided to look at Home Depot and i could not believe the selection of BBQ equipment they have... definitely going to Home Depot from now on...

Close but no. i do not prefer them to be...BUT my wife does... so next time hers will be wrapped in foil.
 
I am not quite sure what kraft paper is.....i dont think

I think kraft paper is like a paper bag, like shipping paper not butcher paper. I have gone to no foil about 3 months ago. I really like it. Baby backs at 275*, done in 3 hours + glaze time. Yours looked great. Good luck, Joe
 
Did a similar experiment last weekend for the first time as well. Two slabs with the same everything, one in foil and one without. The wife preferred the one in foil and I joined the dark side.
