So I picked up some ribs yesterday and I usually do the 2-2-1 method. I typically foil with a little of the spritz that I use (apple cider vinegar and pepsi), squeeze butter, and brown sugar.
I was reading a few posts last night and saw a bunch about foil or no foil. I often have this debate with myself making brisket or pulled pork, but I never really did with ribs…until now. I figured oh well, what’s the worst that can happen… I’ve had dried out ribs before, tough ribs, and ribs you couldn’t pry off the bone so I figured I’d give it a shot!
Basic rub with cumin, chili powder, granulated garlic, onion powder, salt, black pepper, cayenne pepper, and paprika (roughly equal parts) and on the smoker at 250*.
Here they are 2hrs into the cook after a quick spritz(normal foil time).they’re getting a little dark(the pics looks lighter)
, having second thoughts about the no foil, but I’ll try and hold out and see what they look like in an hour…
