Hi All I need too replace NFDM in my sausage recipes..What would be good to use I have tried Soy concentrate before and was NOT too happy with it..I was using NFDM to retain moisture in my sausages.

PS Wife is now lactose free.
 
Try adding some STPP... It retains the natural juices without adding bulk...
Add it at 0.4% the weight of the meat... meat wt. in grams X 0.004 = weight of STPP needed...

I haven't tried it yet but heard good reports on it. Waltons claims it will absorb 24 times it own weight in water and it is all natural...
