Hi, I just joined today, and thought I'd give a little intro.  I live in Texas, so I grew up on a carnivore diet.  I have been into grilling and dehydrating, for awhile, and just got my first smoker yesterday, and I'm kind of looking for some tips on using it.

I was just looking at that course, actually, I was wondering if it was worth it.  Thanks for the heads up:)  What meats would you recommend, for a beginner?
