I am an old Chili Cook-offf Guy...who is now (new) into smoking...bought first smoker...weeks ago...first try was at Xmas...tough smoking in north country...with sub freezing temps...but...I improvised...built a "wind bunker" of plywood and two inch foam board insulation...works great!

Question....to flip or not flip the meet during the smoking process...I have a six rack smoker...today filled with pork butt, turkey breast, beef brisket, ribs and brats...got em all going...

spraying every 1/2 hour with apple juice...so...should i turn meats...or let them rest in place...?
 
No you don't need to turn the meat and you should also stop bathing the meat in cold liquid, you are going to add hours to your total cook time.

Every time you open the door you lose heat and it takes time to get back up to temp- hence the saying "if you're lookin' you ain't cookin'".

Plus the cold bath your giving the meat every 30 mins also cools it off. Spraying the meat to keep it moist is a waste of time IMHO.

No need to flip the meat when you are cooking with indirect heat.
