I am running the cables carnivore 3/4 hp it was a little pricey but hasn't flinched today did 75 lb pork with out an issue...deer, chicken, & beef never an issue. As far as stuffers I agree go bigger than what you think you will need...I am rolling the Weston 11 but as mentioned seems to be more like 9.5 lbs. Metal gears are a must plus this one has two different cranking options high speed & a low gear for cranking sausage out with ease...excuse the mess just finished 350 Reuben brats for a weekend event.

I bought a LEM mighty bite, scratch and dent from Amazon saved like 10%. You will have to buy a tube for snack sticks the smallest tube is 1/2 inch. One thing I like is that the steel gears are encased on this model.

For a jerky gun; Fleet Farm has a pretty basic one that holds about a pound of meat in the chamber for all of 20 bucks when I picked it up Walt.

For a stuffer:

For a grinder:

These are what I got.

I can snag you a jerky gun from fleetfarm and bring it with me to MI if you lack one up there Walt. No big deal to do that. I still use mine for doing small batches of summer sausage or shooting links for sizzlers when I freeze em.

Edit:

Sorry had to use tinyurls...it kept making my amazon links into media and...well I have no idea what that is so I just made them tinyurls..

The first is:
Goplus 2.5 Lb/1.5L Vertical Sausage Stuffer Maker Stainless Steel Meat Filler, with 4 Sizes of Food-Grade Sausage Tubes for Commercial Home Use*

Second is:
