hi all,

so here it is - i've been plank cooking just about anything you can imagine for about the last 3 years - but after watching some of the bbq/smoke'n competitions on tv, i decided it was time to step things up. last weekend i went out and bought a camp-chef smoker and a 9 lb prime rib - after doing the breakin, and prepping the PR - i smoked it for 5.5 hrs @ 250 / this was the absolute best prime rib we had ever had.......so, this saturday i've decided to take on the brisket - now i dont know if i just got 'lucky' with the prime rib - but i would definitley appreciate any guidance you guys might give a newbie smoker......

You're pretty brave starting out with an expensive piece of meat like that then jumping into a brisket, I like it!

You can use the search bar at the top to find almost anything you want to know! Search "brisket", there is a lot of great info in here about smoking them!
