Hi there,

I am very new to the whole smoking thing, but have wanted to try it out for years. A number of years ago I live in Louisville, Ky. just a short distance from an open pit BBQ and smokehouse restaurant. Oh the smells that would come out of that place(hickory smoke on a nice summer breeze) ... and the food, heavenly. I was hooked. I am finally in a place where I can try my hand at smoking meat.

Being handy with a welder and having a DH who is a wire guy, I am interested in building my own equipment. I am interested in starting with a UDS. If any of you seasoned veterans have input on plans, construction etc. please drop me a line.

I am in the process of buying a meat grinder for making raw dog food for my guys and thought I might like to try my hand at sausage. I want to learn to smoke poultry as I raise my own chickens and the extra guys get shipped off to freezer camp. I would also like to learn about different types of wood smoke/flavors and pairing them with different meats.
