I've been smoking for years - fish, sausages, jerky mostly. Decided to upgrade from my big chief and build a biggun out of a commercial freezer. I've lurked on here for a while getting my questions answered regarding the build. It's been quite a ride - removing the old insulation, building the new cabinet, and finally wiring everything up. Looking to learn as much as I can from folks with way more experience.
