Just throwin' a "howdy" out there to the denizens of this fine community. I'm doing some research on a pit build and came across SMF and found more than enough info and tools to get myself into (more) trouble.

I have a background in construction and welding, but  worked in the restaurant biz for a number of years. A couple of the restaurants were BBQ joints in Arkansas were I ran the pits for fairly high volume places (100+ ribs, 50 butts, 50 whole yardbirds, etc...). Nothing too extreme, but enough to keep you busy.

I'm lookin' at buildin' an offset for mostly brisket and some shoulders. Living in Texas for a number of years got me hooked on brisket and sausage...so the offset seems to be the way to go. Anyways, I'll try and not ruffle too many feathers while steppin' on your toes.
