Ok so I've done a bit of bbq, but just started using an offset bbq.
Not sure of manufacturer, but it has a Texas longhorn on the front.

So far not to impressed, uses way to much fuel. Now I have my eye on a vertical smokers. I have access to a full metal shop and know how to use all of it. So I'm going to build one. The plan is to post up and let those who "know" add ideas.
I brought a set of plan to have a starting point.
 
I don't own an offset but everything I read about them says the cheap ones loose a lot of heat so they require a lot of fuel to keep them running.

If you are looking to build a smoker, have you though about a UDS? They are cheap, easy to build, and work extremely well. 
 
I have access to a metal shop, so figured I could make something a bit nicer looking then a barrel. I've looked and some look nice. I hope to get busy this coming weekend
