OK gents, I have a 5lb. brisket.  Need a fairly determined done time.  Have a smokey joe's smoker.  I hear the best for newbs is smoking in the outdoors (about an hour) followed by slow even cooking, wrapped in foil in the indoors even?   Can I please get detailed instruction on the process for a 5lb or less brisket!!!

You can figure about 1.5 hours per pound at a smoker temp of 225* but you can never go by time, you have to follow temps and with a brisket you can tell when it's done by tenderness. If you want to foil and put in the oven make sure you take it to about 150* IT (internal temp) before foiling and then cook until about 190* IT and you can check tenderness with a probe or toothpick, it should slide in like warm butter.
