Hi
My name is Heidi and I've been trying to get good BBQ with a Weber gas grill. Some stuff turns out nice, but I want to build my own proper smoker. I don't think I'll be doing a whole hog anytime soon, so it wouldn't need to be large. I have a RediChek thermometer and I've been using hickory wood.
I just took a photo of my set up with a pork butt smoking. Started it at 11am today, it's now 4pm.
I post the photo in a bit.

Here is my set up. Wood is in the front left corner with the front burner on.(burners run left to right) The middle and back burner is off. Pan of water below pork butt.Thermometer probe on grill, back near meat. I don't have the meat thermometer in yet. I have a few more hours to go.


Being I'm going to be using this for awhile, any hints to make my set up better.

I just ran out of hickory chips that I bought awhile ago. We now live in the country with lots of Hickory trees. I'm going to cut a large limb and dry some wood so I can use chunks.
