Hello, I figure I get my introduction out of the way for the Roll Call.

I am from ND and been around meat and smoking departments at grocery stores since I was working through college.  Got addicted there, and now do most of my meat processing and smoking at home.

I have been smoking for a few years, but now just fine tuning my skills.  Recently bought the MES-30 and had a propane Smokey Mountain before that.  Came across this site and there are some great tips on how to make your BBQ just that much better.  I have done ribs and pork roast so far in the new smoker, now ready to try something new. 

So I look forward to tips and secrets to making great BBQ.
