I have been browsing this forum for a couple of months as I have been learning to smoke meat. All of the info has been very helpful. I started out with an ECB back in Aug. and just upgraded to a 18.5 WSM. Caught it on good deal on Craigslist. It had only been used 4-5 times and bought it for $200. I put it to work immediately today, smoking 6 butts (~4.5 lbs each) and about to do 30 lbs of chicken breast(I am doing the meat for a fundraiser for my daughter's school. We're selling stuffed baked potatoes). Look forward to learning from all of your wisdom about smoking meat. Thanks for letting me browse and post.
