Hi all!

Just wanted to say hello to all the people who has giving such great advice on equipment, recipes, and other things that make others feel more confident with smoking.

Long time reader of this forum and have used so many tips tricks, that I've lost count.

Found out about a little thing called the AMNPS on here...saved my marriage! 

Would like to be apart of this community and share what I know as well.

I'm from NC originally and have lived all over this great country.  I used to think only "real" BBQ came from Lexington, NC.  However I've learned that the only bad BBQ is the one you don't try!

Should mention that I use a 2011 MES 40"  with AMPS.  Just bought this unit and found Sams also had the 2012.  They are sending me the new one to compare and I only have to take back to store the one I do not want!

I've used big cookers, small cookers, cooked in a real "pit", grills of anykind.  If it will burn errr.....cook meat, I've used it!

The appropriate place for pics is in the forum they relate to. If you smoke some ribs and want to share your process and pics then put it in the Pork forum. If you smoke some chicken then post in the Poultry forum and so on!

I'm a native of Raleigh and have a brother in the Johnson City who went to NCSU (back when it was just NC State College). Myself, I matriculated and earned my degree at the REAL University of NC - the one in Chapel Hill, The Southern Part of Heaven. :yahoo:

Watched your basketball team play at the Dean Dome yesterday. They have had a great year, but what's up with those gawdawful black uniforms?
