Well I just completed the maiden voyage with my home built smoker. Thanks to the help of some local friends and members of this forum it went very well. I used a recipe by John Besh. Good stuff. I originally thought that I hadn't laid down enough smoke, but the final product was "the best" per my wife,which is high praise. After reading some of the comments on this site I spatchcocked the chicken (a first for me). Tomorrow....ribs :)
