I've been lurking and reaping the benefits from this great site. I figured it's time to chime in and start showing off some meat!

Equipment: I started with a Master Forge Red electric smoker from Lowes which I quickly returned because of the unstable temperature control. I am now the proud owner of a Masterbuilt Electric Smoker 30' which I picked up from Amazon at a steal. I also picked up the AMNPS and it is indeed "AMAZEN".

Meats: I've smoked spare ribs, a tiny brisket, and a pork butt with varying levels of success. The beef jerky I smoked most recently has probably been the best out of everything so far. I am now in the process of smoking some beef sticks which you can see below.

1# Lean ground meat and Nesco seasoning, using the Nesco jerky shooter. I'm starting the smoker a little high at 170 degrees to get the meat to firm up so I can take it off the aluminum foil, and to kill a few extra germs. Doesn't look too appetizing but I'm sure it will be delicious. I'll be sure to include a photo of the done product.

3.5 hrs later and it's ready to move to my convection oven to finish. Thanks for looking!

All the best from The Colony,

Charles
